Turkey Meatloaf with Roasted Asparagus & Mashed Sweet Potatoes

Rutland Regional's Executive Chef, Jackie Hesse, provides a healthy and hearty meatloaf recipe for March.

Turkey meatloaf with roasted asparagus and mashed sweet potoates

Meatloaf Ingredients

  • 2.5 Lbs – Ground Turkey
  • 1 Tbsp – Worcestershire Sauce
  • 1/2 Cup – Panko Breadcrumbs
  • 1 tsp – Minced Garlic
  • 1 Cup – Crispy Fried Onions, Crushed
  • 1 tsp – Onion Powder
  • 2 Tbsp – Minced Red Onion
  • 1 tsp – Celery Salt or Ground Celery Seed
  • 1 – Egg, Beaten
  • 1 tsp – Black Pepper
  • 2 Tbsp – Dijon Mustard
  • 1 Tbsp – Kosher Salt
  • 2 Tbsp – Ketchup
  • 1 Tbsp – Fresh Chopped Parsley

Meatloaf Topping

  • 1 Tbsp – Brown Sugar
  • 1 Tbsp – Water
  • 2 Tbsp – Dijon Mustard
  • 1 Tbsp – Smoked Paprika
  • 1 Tbsp – Ketchup
  • 1 tsp – Garlic Powder

Sweet Potatoes & Asparagus

  • 2-3 Sweet potatoes, peeled and cut into slices
  • 1 Bunch Asparagus, rinsed and woody ends discarded
  • 1 Tbsp – Butter
  • 1-2 Tbsp – Non-fat Plain Greek Yogurt
  • 2 Tbsp – Olive Oil
  • Salt & Pepper to taste

Directions

Meatloaf & Asparagus 

  1. Combine all Meatloaf ingredients in a large bowl, mix together until well combined, being careful not to over mix. Transfer mixture to a parchment paper lined baking sheet and shape into a rectangle. If you prefer to bake meatloaf in a loaf pan, you certainly can, however I prefer this method as it allows the top and the sides to brown more, giving more caramelized flavor. If choosing a loaf pan, cook time may slightly increase.
  2. Spread the top of meatloaf evenly with Meatloaf Topping. Loosely cover with aluminum foil.
  3. Bake in a 375* oven for 30 minutes then remove foil. Cook for another 15 minutes or until internal temperature of 165* is reached.
  4. For the last 15 minutes of cooking on the meatloaf, add cleaned asparagus to a baking sheet, toss with olive oil, salt, and pepper, and roast in the oven until tender.

Mashed Sweet Potatoes

  1. In a medium sized pot, boil sweet potatoes until soft.
  2. Drain and mash sweet potatoes, adding salt and pepper to taste, as well as butter if desired.
  3. Optional, 1-2 T non-fat plain Greek yogurt to add extra creaminess.
